My favorite is the Calypso Spinach Salad and I ask for the dressing on the side. It is higher in calories, but I'm so happy that they post nutritional information, so I can make informed decisions about what I can order at this restaurant.

The rice bowl serving is so large I could only eat half. I order the chicken with brown rice.

This place is amazing. They are in 12 different cities in Utah. Also if you have the Utah Entertainment Book there is a coupon in it for Rumbi Island Grill. The food is healthy and delicious with very unique flavors. I've only been there once but I can't wait to go back again!

Everything at Rumbi Grill is made to order with the freshest ingredients. They are very willing to substitute items and modify a dish to meet your nutritional needs. I prefer the Jamaican Jerk Chicken Salad without the dressing or the Calypso Spinach Salad without the dressing. Their web site has nutritional information which is helpful . . . note that their dishes are surprisingly high in calories. Save your calories by asking them to leave off the dressing. Bring your own or use their gluten free salsa. Their entrees are trans fat free.

There are numerous locations for the Rumbi Island Grill across the Wasatch Front: Bountiful, Draper, Fort Union, The Gateway, Jordan Landing, Layton, Lehi/Am. Fork, Murray, Orem, Riverdale, Salt Lake, and Sandy.

Chef Meg moves strawberries from the dessert course to the salad course. Fresh and juicy during spring and summer months, strawberries are delicious when combined with tender spinach and crunchy toasted almonds. This dish was inspired by a member-submitted recipe. She reduced the amount of sweetener used and then increased the vegetables to ensure you'd get a full cup of fruit and vegetables.
TIP: Instead of slicing strawberries for the salad, quarter them. Quartered strawberries are easier to pick up with a fork! Full Recipe
