The Salt Lake City Sports Complex was the official training venue for the 2002 Winter Olympics, and continues the legacy by providing world-class opportunities available to the residents of Salt Lake City. The state of the art Salt Lake City Sports Complex and Steiner Aquatic Center features two state of the art Olympic Ice Sheets, an outdoor 50 meter Olympic-sized pool, an indoor 25 yard pool, a hot tub, 2 saunas, and fitness facilties. The fitness programs include aerobics, Pilates, yoga, and Spinning classes with certified personal trainers. The center also features extensive resources in nutrition, sports psychology, competition training, cross-training and flexibility. The ice sheets host a variety of Learn to Skate classes and the Salt Lake Figure Skating Club.

Southwestern Chicken Soup

I made this soup after trying a similar one at a restaurant. Theirs had fewer tomatoes, no beans and white rice. I wanted to add more nutrition, so I added spinach, a green pepper and more tomatoes, and I use white meat chicken instead of dark. Beans and brown rice add fiber.
