I've read about a lot of people who are vegans, and they eat high carb, very low fat diets. They eat TONS of veggies, potatoes, plain pasta, rice, fruit. Like 3,4,5000 calories a day. I buy shredded carrots so they are easier to use. I put some fat free cottage cheese in things that call for mayo. I cook/roast lots of veggies so they are "leftover" for the next day's snacking.
