| I love asparagus, especially grilled or roasted. I also like to wrap a thin slice of prosciutto around one or two pieces of asparagus. Very yummy and makes good appetizers.

| asparagus is one of my favorite vegetables. We have an asparagus farm so we eat it all kinds of ways. I even pickle it.

| I love asparagus on the grill with a little coconut oil. It sounds strange but is actually very tasty. I use the oil on all my veggies.

I can definitely vouch for the roasted asparagus instructions. I love asparagus and will eat it any way I can get it, but my absolute favorite way to get in my daily asparagus requirement is by roasting. Yummy! You can also try grilling it, steaming it for three to five minutes, or blanching in boiling water just until it turns bright green. Grilled or roasted asparagus is great by itself as a side dish, and asparagus that's been steamed or blanched is wonderful mixed into omelettes, rice dishes, and salads.
I don't eat artichokes as much, but a lot of food bloggers have been discussing them lately, now that they're in season.
Simply recipes has a blog entry called "How to cook and eat an artichoke" about...well, you know. :) (The URL's broken onto more than one line -- make sure you copy the whole thing!) http://www.elise.com/recipes/archives/000262how_to_cook_and_eat_an_artichoke.php
Cook and Eat has an entry explaining how to prep an artichoke raw, as well as a recipe for a Moroccan frittata. You can use their prep instructions for any dish that calls for fresh artichoke, though. http://cookandeat.com/2007/04/18/a-moroccan-inspired-artichoke-frittata/
I hope this helps...there's nothing better than fresh veggies in season, so enjoy!

here is a very simple one for you. roasted asparagus.
just toss trimmed asparagus in olive oil and salt. then put it on a cookie sheet, and put it in the oven until it is browned a bit. give it a shake half way through.
i can't remember how long it takes. but i would put it in at 375 or 400.
the ends get crispy. i love it.
