Garbanzo beans are called Channa or Chole (cho-lay)in India.
Chole masala is very popular in north Indian state of Punjab.
Chole Masala ---------------- Ingredients:
1 cup Chole [white] Canned - they are the easiest to cook with. 1 small Red Onion 6 garlic cloves 1"piece Ginger 3 tbsp Tomato puree 1-2 Cardamom 1 small stick Cinnamon 2 Cloves 8-10 beads Black Pepper 1 tsp Jeera/Cumin seeds 1/2 tsp Turmeric powder 1 tsp. Chilli powder 1 tsp. Garam Masala 2 tsp. Channa Masala Powder - You will find this in the Indian grocery market. 2 Green Chillies finely chopped 2 tbsp Green Coriander finely chopped Salt to taste 4 tbsp Oil (This dish is fairly spicy, you can cut down on the chili powder and green chilies to lower its hot content)
Method :
1. Peel onion, garlic & ginger & grind it throughly to make a fine paste. 2. Take oil in a dutch oven, heat it & put cardamom, cloves, cinnamon, black pepper & jeera. When it starts spluttering put the paste in it & fry it until golden brown. 3. Mix turmeric, chili & channa masala pwds. to it & fry again for 2 minutes, then add tomato puree to it & fry until it leaves the oil. 4. Now mix boiled chole to the masala & put garam masala pwd. & let it boil throughly on low heat for 20 minutes so that masala can blend well. 5. Add chopped chili & coriander & let it boil for more 2-3 minutes.
Serve it with Basmati rice or Indian bread.
Note : Punjabi chole are generally thick but if you want to make it thin it's up to you.
