| you could try making a cheese cake with tofu and a flax seed crust and then cutting it into individual bite sized squares. there are some great cheese cake receipes on this site.

I've done a chicken salad for years thats relatively healthy.
Boneless, skinless chick breasts (either steamed or poached til they are cooked - this is a gentler method of cooking them and prevents them from getting rubbery when chilled) Reduced fat or fat free sour cream 1 lemon, zest and juice 1 handful of flat leaf parsley, chopped 2 tbs sweet curry (totally optional, i think it gives it some kick though)
Chop up the cooked chicken, mix witht he sour cream, lemon, and parsley and put in fridge for an hour or so.
serve on whole grain toast points, inside a tomato, or in cucumber boats

This is a take on a recipe I got from Kraft
cucumbers,tomatoes, green peppers & red onion roughly chopped roasted red peppers black olives pepperocini low fat feta cheese Ken's light olive oil vinegarette (a little goes a long way) crushed black pepper red pepper flakes
Mix all together and let sit for at least a couple of hours before serving (even overnight is fine)
Depending on how many people I want to feed determines how much of each item I use. It's a really easy recipe and with all the colors together, it's a pretty salad.

Tortilla Wraps (I apologize these are not exact measurements) 12 large flour tortills 1 can black beans 1 package cream cheese Shredded cheese (optional) 1 jar of salsa sour cream or plain yogurt. 1 head of Romain lettuce or bag of Spinach
Mix beans, salsa and sour cream or yogurt together in a bowl. (add shredded cheese if you choose) Spread a thin layer of cream cheese on each tortilla. Lay lettuce or spinach over 1/2 of the tortilla. Spread a thin layer of the bean mixture over 1/2-3/4 of the tortilla.
Roll up and refrigerate covered for a few hours or over night.
Cut up to 2-3 inch lengths before serving.
You can use any kind of bean and add additional veggies. Shredded carrot, shredded zuchini, mushrooms, olives.....anything you like!
A yummy healthy bean dip I make is: 1 can of vegetarian refried beans 1/2 cup plain yogurt 1/2 cup shredded cheese 1/4 cup salsa (I use the green Trader Joe's salsa but you can use any kind)
Mix together and heat in the microwave until you can get all of the ingredients mixed evenly. Add more salsa to taste.

Or BBQ sausage coins - slice a turkey smoked sausage into rounds about 1/3 - 1/2 inch thick ... place in a casserole dish with bottled BBQ sauce or make your own from 12 oz. diet coke & 8 oz. ketchup. Heat in oven or Crockpot till hot.
