Mayonnaise
1 egg yolk 2 1/2 t white vinegar 1 t water 1/4t + 1/8 t salt 1/4 t + 1/8 t granulated sugar 1/4 t bottled lemon juice 1 c canola oil
Whisk the egg yolk by hand for 15 seconds. Combine vinegar, water, salt, sugar and lemon juice in a small bowl and stir well until salt and sugar are dissolved. Add half of this solution to the egg yolk and whisk for another 15 seconds.
Pour oil into a plastic squirt bottle. (Use a ketsup/mustared skinny-tipped bottle to dribble the oil into yolk with one hand while whisking with the other.) Squirt a few drops of oil into the youl and whisk and continue to add oil a little at a time while whisking nonstop. When you have used about half the oil your mayo should be very thick. Add the remaining vinegar solution. Whisk. Now you add the remaining oil while whisking. Keep up to 2 weeks in refrigerator. Makes 1 cup.

There is 95 mg sodium in 1 T light mayo. I don't know how much in buttermilk. I don't have any right now. You could omit the salt from the recipe. In order to omit the preservatives in the mayo, you could make your own. I have a recipe that tastes like Best Foods mayo, but don't have a recipe for light mayo. Let me know if you want the recipe. You could eleminate a lot of sodium that way.

| I guess if you want to avoid the chemicals, the only thing you can do is grow you own food, make your own food. At least the US has regulations. Be careful buying things from China. The people in food processing that I know won't buy any food products make overseas, even produce.

| Titanium dioxide is basically a food coloring, used in various things from plastics, to paper, to toothpaste. It's what gives the dressing it's white coloring.

| I like to dip my veggies in ranch so I bought some ranch dip. (Reser's) It tastes as good as ranch dressing to me, but has 50 calories less per 2T.

| I use Nalleys Light Mayo because it is what I like the best. It is only sold in the Pacific Northwest, but I think you can get it on Amazon.

Here is the recipe I use for ranch dressing.
Makes 8-2T servings.
1/2 c Nalleys Light Mayonaise 1/2 c low fat buttermilk 1/2 t dried parsley flakes 1/4 t each: blk pepper, salt, garlic pwd, onion pwd 1/16 t thyme
Mix together, cover and refrigerate at least 30 minutes before serving.
2 T=41 cal, 3 g fat
This can also be made with fat free sour cream, cottage cheese or fat free cream cheese depending on what you like and what you want to use it for.

| I was curious about ingredients in a no calorie dressing too, so I checked the website. Here are the ingredients for the Ranch dressing: triple filtered purified water, white vinegar, salt, oat fiber, cellulose gel, pasteurized egg yolk, natural flavors, onion powder, garlic powder, titanium dioxide, lemon juice, white pepper, xanthan gum, propylene glycol alginate, parsley, sodium benzoate (to preserve freshness), sucralose. The only value they show is 230mg sodium per 2T serving and every other nutritional marker is "0g". Almost free "food". This ingredient list is similar in all their dressings. Eh em, what is "titanium dioxide"? sounds not like something to eat...

| I have found even some of their stuff at couple of dicount gro stores where I live for $1 or less. And have stocked up. Love their choc syryp tastes great. The are sort of pricy in reg gro store. Sometimes with italian dressing I will add just wine vinager or some home made gormay vig to salid save so much on cals with Walden Farms stuff.

| hi all, FYI, I was grocery shopping today for some salad dressing and I have been craving ranch lately instead of low cal vinegarette or italian. I found this ranch dressing with zero carbs, calories, and fat...its called walden farms ranch dressing. you should try it! It tastes great...not as good as the regular homeade of course...but it definitely satisfied my craving and with no cals!!
