Zucchini Pancakes 3/4 of a cup flour 4 to 5 med. zukes (1 1/2 lbs) 3/4 tsp. salt (I didn't use) 4 eggs 1 clove garlic minced (I used already minced from the jar) 1/2 c. grated Parmesan cheese 1 Tbsp. finely chopped onion (I used green onions chopped because we like lots of onion and love the green ends) 1/4 tsp. ground black pepper sour cream--optional
trim and coarsely shred zukes. In bowl toss zukes with salt, place in colander and weight with a plate and soup cans for about 15 mins so squash drains. (I nixed the salt part because of too much sodium and squeezed more water out after it drained for the 15 mins)
in separate bowl beat eggs and garlic. Stir in flour, cheese, onion and pepper until moistened (batter will be lumpy)...stir in zukes until combined.
drop a heaping Tbsp. of batter on to a hot lightly oiled griddle or skillet, spread to 3 inch circle. Cook over med. heat 2 to 3 mins on each side or until lightly browned. Drain on paper towel. Keep warm till served.

HOT PORK AND PEAR SALAD
1 lb. bonless pork chops cut into 3 x 1/4 in. strips 2 ripe, yet firm pears 1 Tbls margarine or non stick spray 1/4 cup cider vinegar 2 Tbls granulated sugar 1/2 tsp. salt 1/4 cup rasins 6 cups mixed salad greens 1/4 cup walnuts, toasted and coarsley chopped
Cut pork into strips:set aside Prepare and core pears then cut into 12 slices. Melt margarine in a large nonstick skillet: gently saute pears until they are tender but still hold their shape. Remove from pan and set aside. Add nonstick veg. spray to pan and stir fry pork until lightly browned, about 3 min. Remove pork from pad: add vinegar sugar and salt to pan juices; cook and stir until sugar dissolves. Return pork and pears to pan with rasins. Stir gently to heat through. Put salad greens in a large salad bow. Spoon over pork mixture and toss. Garnish with walnuts. Yeild 6 servings.
