Buying Bok Choy

Look for:
bok choy stalks that are pure white, not rusty," and firm. Look for leaves that are dark green and are not wilted."

Avoid:
wilted, broken, or spotted (rusty") leaves, limp stalks, and discoloration."

Storing Bok Choy

Bok choy will keep for 3 days unwashed in a plastic bag in  refrigerator.

Preparing Bok Choy

Chop off an inch of the stalk before washing so that it can be cleaned under running water. Separate stalks or leave them together when chopping.
