Buying Endive

Look for:
endive heads that are crisp and bright green. If choosing Belgian endive, select heads with tips that have a pale, yellow-green color.

Avoid:
endive heads that are wilted or have browning heads.

Seasonality: All year; peak season is late fall to early spring

Storing Endive

Wrap endive in a paper towel and place in a plastic bag. Refrigerate up to 1 week.

Preparing Endive

Rinse endive in cold water just before use.  If the leaves look wilted, soak them in a bowl of cold water to revive.
