Buying Green Beans

Look for:
brightly colored beans that snap easily when bent. Select beans of similar size and shape for a more uniform cooking time.

Avoid:
beans that have visible seeds and blemishes, or are stiff.

Storing Green Beans

Refrigerate in a plastic bag up to 1 week.

Preparing Green Beans

Wash  beans in cold water before cutting and cooking, then trim both ends. To retain sweetness and crispness, trim beans but keep whole. Older, stringy beans should be cut lengthwise.
