Buying Plantains

Look for:
plantains that are firm when green, yield to gentle pressure when yellow, and slightly soft when ripe (black).

Avoid:
plantains that are cracked or moldy.

Seasonality: All year

Storing Plantains

Store plantains at room temperature. Consume ripe plantains within a few days. Green plantains will ripen slowly at room temperature, taking a few days or weeks.
