Wrap sweet potatoes individually in newspaper and store in a dark, cool (55-58 degrees Fahrenheit), well-ventilated place for a month.

Preparing Sweet Potatoes

Scrub sweet potatoes with a brush in a bowl of cold water before cooking. Peel sweet potatoes if desired, but the skin is edible.
