One of my favorite snacks I like to have at night when I am working. 2 White cheddar rice cakes, with 1/2 cup of regular cottage cheese. I add about a half tsp. of ranch dressing powder. Gives me a fat, a carb, and a protein! That is part of my 1+1+1 way of eating. YUM!

Although usually edamame beans are sucked out of the pods as finger food, some people like cooked shells of edamame also, depends on when they're picked and how they are prepared. So if you try a pod, it won't kill you. I like to keep roasted edamame on hand for when I need a fast minimeal - just 1/8 of a cup has 65 calories and 7 grams of protein, 4 grams of fiber. I find them easier to digest than mature roasted soybeans. They keep very well (easily for months at least), so you don't have an excuse to eat them up fast after opening a package. I like to have 1/8 cup plus some dried fruit (mulberries give a lot of bang for the buck, for instance, although any dried or fresh fruit will do).
