Mini Chicken Fiesta

Fill 1 small corn tortilla with 3 oz chicken. Sprinkle on 2 Tbsp cheddar cheese and top with 2 Tbsp salsa. Warm in microwave if desired.

Although usually edamame beans are sucked out of the pods as finger food, some people like cooked shells of edamame also, depends on when they're picked and how they are prepared. So if you try a pod, it won't kill you. I like to keep roasted edamame on hand for when I need a fast minimeal - just 1/8 of a cup has 65 calories and 7 grams of protein, 4 grams of fiber. I find them easier to digest than mature roasted soybeans. They keep very well (easily for months at least), so you don't have an excuse to eat them up fast after opening a package. I like to have 1/8 cup plus some dried fruit (mulberries give a lot of bang for the buck, for instance, although any dried or fresh fruit will do).

Cheeps and vending machine crap - staying there for months - they'll stay with you for months too)

Great suggestions, some have higher calories then I usually plan for snacks. But I agree with everyone else and wish we could print these. I couldnt even email it to try to print it that way as someone suggested.
