Slow-Cooker Vegetable Curry

Slow-cookers aren't just for meat! Give this spicy curry a whirl to change up your dinner menu. To cool it down, serve with a side of milk (or non-dairy milk), and a cucumber salad.

'Cheesy' Quinoa Casserole

This meat- and dairy-free casserole is savory and satisfying, and packs a mean fiber punch from the quinoa, black beans, and sweet potatoes. The secret "cheesy" ingredient? Nutritional yeast, which is inexpensive and readily available in health food stores.

2-Bean Sweet Potato Chili

Need a stick-to-your-ribs meal that won't stick to your waistline? This satisfying chili gets its flavor from herbs and spices instead of fat. The combination of smoky paprika, cumin, and jalapeno will have even the most diehard meat-eaters coming back for seconds!

Comforting Cold-Weather Stew

Who doesn't like soup on a chilly evening? This thick soup is tomato-based and packed with veggies (and protein), but is every bit as comforting as its meat-based counterparts. Ladle it up with some salad and bread on the side to call it dinner.

Easy Bean Tostadas

These tostadas are cheap, filling, and super easy to make! Serve them up buffet-style and have your kids load them up with their favorite healthy toppings.

Mango-Avocado Salad with Lime-Cilantro Dressing

This unique salad combines the textures and flavors of creamy avocado, juicy mango, and crunchy almonds and carrots. It's filling enough for a meal, but can just as easily stand in as a side dish at a summer barbecue.

Seitan Fajitas

Think outside the box with these seitan fajitas! Seitan is a meat substitute found in the refrigerated section of your supermarket. It is made from wheat gluten, which is high in protein. It takes on a surprisingly meaty texture and soaks up whatever flavors you cook it with. Try it in this recipe for a south-of-the-border twist.

Black Bean Chipotle 'Sausage'

This faux sausage gets its texture from hearty black beans and its flavor from cumin, chipotle salsa, and garlic. Use it as a stand-in for taco meat or breakfast sausage.

Tofu Breakfast Scramble

Soft or "silken" tofu is a versatile, protein-rich substitute for scrambled eggs. Cook up this tofu scramble and use it as a breakfast burrito filling, or enjoy it by itself with a side of fruit.

Simple Zucchini Caponata

Caponata is a traditional Mediterranean vegetable stew. This version is chock-full of veggies and tastes great over pasta, or paired with crusty bread.

Lentils Puttanesca

Puttanesca is an Italian sauce traditionally made with meat. Here, we sub in lentils for a hefty serving of fiber and veg-friendly protein.

I'd have loved to read this, but on principle, I won't click through multi-slide articles like this. I just won't give the clicks. Plus it's difficult for people who don't have great data on their phones.

The sales ad was next to the recipe picture and I was able to click the "next" and "previous" but to get to the recipes. Once I found one I like there was a button at the top for printing and it worked find for me.

If you are unable to print this way copy the recipe and place it in a Word document format and print from there.

I make meals like those every single day. I bought the book, but I have not used it yet. I don't like a recipe I can't print out. I don't want to cook reading a digital screen.
My ad was college funding, nicer than a constipation ad.

I love me some cheese and my friend who is vegan told me about nutritional yeast. It's pretty good. If you blend it with chopped almonds, it tastes pretty close to Parmesan cheese. Great substitute. :-)

I'm seriously thinking of buying the meatless recipe ebook, although I am not sure I'm set up for an ebook. I feel $2.99 is a very good price. "SOUNDS GOOD!"
