Like sparkbjok I like any kind of cottage chees, but especially with cut up fresh fruit. Being vegetarian I never combine it with meat, nor any of the false sweeteners like Splenda sugar twin etc which destroy your body. Stevia is the only one I would use .
A delicious treat is melt bakers dark chocolate and add a bit of honey or stevia then drizzle it over a mound of cottage cheese for a great dessert
So many other delightful recipes besides the original offering.

Here's my go-to for breakfast:

3/4 fat free cottage cheese
3/4 c. fresh blueberries
28 almonds
1 tblsp honey
1/2 tsp Vietnamese cinnamon (very strong)

Favorite and so simple: For lunch the following day, mix Original Mrs. Dash with cottage cheese and refrigerate overnight. The herbs and spices suffuse the cottage cheese with flavor, and it's very satisfying, with no additional calories. If you have time, you can also chop fresh veggies to mix in, but do that in the a.m. or just before eating.

My favorite way to use cottage cheese is in a cottage cheese/special K roast which is a favorite vegetarian entree. It is tasty, nutritious and very popular at our vegetarian potlucks at our church.

Cottage Cheese, frozen grapes(good as candy) and small portion of chopped walnuts on top. I eat that with light whole wheat toast, a touch of Smart Balance buttery spreand a a sprinkle of cinnamon sugar

I mix 1/2 cup cottage cheese with a teaspoon of cinnamon and 2 packets of Splenda for a delicious sweet treat *packed* with protein. Also, it can be spread onto a slice of whole grain bread and broiled for a yummy breakfast 'pastry'.

Good morning--Great suggestions, thank you.
I'd like to share my fave cottage cheese recipe:

1 Package Jello--sugar free or regular.
2 Cups low fat cottage cheese
1 Cup hot water.

Pour jello into blender container.
Add water and allow to sit for 5 minutes.
Add cottage cheese and puree.

Be sure to liquify the mixture or it can be gritty.

Divide equally among 4 containers and refrigerate until set.

I have used portable containers for lunches/snacks at work.

MUST BE REFRIGERATED!

ENJOY!--My fave is lime flavour.

Acorn or Butternut Squash Stuffed with Mushroom Cheese Filling

2 acorn or butternut squash
1/2 lb. mushrooms, chopped
1 c onion, chopped
1 clove garlic, crushed
1 c low fat cottage cheese
1/2 tsp. basil
1/4 c parsley, chopped
salt and pepper to taste
3/4 c cooked brown rice or bread crumbs
2 tbsp. dry white wine (optional)
Split the squash lengthwise, remove seeds, and bake, face down, on a non-stick tray or on a tray sprayed with non-stick spray for 30 minutes at 350o or until tender. While the squash are baking, saute mushrooms, onions and garlic with salt and pepper until onions are soft. Drain well (save liquid) and combine with the remaining ingredients. Fill the squash cavities amply and bake, uncovered, 25-30 minutes at 350F. Baste with liquid from saut� during baking.
