Delightful Dips

Puree cottage cheese with fresh herbs, garlic, or shallots for a healthier chip dip. (It's great with veggies or whole-wheat crackers, too!)

Stuffed Squash

Is this a cooked egg like scrambled or do you mix raw egg in with the cottage cheese? Really doesn't say much on the Stuffed Squash.

ADRIAAGHASI1: You might try microwaving Broccoli: Chop it up into spears or chunks; wet it down by rinsing well (and leave about 1/2" of water in bottom of glass bowl or casserole). Cover; Microwave on HIGH power. I do about two cups for 5 minutes...drain and let sit for about 3 minutes.... Hope this works for you! If your microwave is a little one it will have lower power and you might need more time.
You can also sauté in a frypan with a bit of olive oil until it is tender...kind of like a stirfry.

I've been making pureed cottage cheese with powder ranch dip mixed in for years; it's one of the few healthy things I can get my grandkids to eat. The ranch dip has to be mixed in with a spoon; if you put it in the blender the end result isn't very good. If I put diced up chives out of my garden in it the dip has a deeper, better taste, but the grandkids won't eat it. When I used to be on the road for work a common meal was cottage cheese used as is for a dip with whole grain crackers.

Like the idea of mixing it with pesto. Nice way to lighten up pesto and make a yummy pasta sauce - just add some veggies and dinner is ready!
