I enjoyed this for dinner tonight. I don't know if the 500 calories includes the brown rice or not, so I tracked that separately. The pineapple and manadarin orange topping gave a great contrast to the kick of the fire sauce.

Two thumbs up!

I've learned to pick out the jalapenos and then the bite isn't as bad.

This is very pleasing to the taste buds! It has a little kick to it - but you can get the sauce on the side. You can also ask for double broccoli and skip on the rice.

Island Chicken with Pineapple Salsa (Chef Meg's Makeover)
Submitted By: CHEF_MEG

Chef Meg modified a member-submitted recipe to make it even easier and more nutritious than before.

Fruit is often a back-up ingredient or side dish at dinnertime, but it gets a co-starring role in this meal.

Serve this flavorful, lean chicken dish over brown rice or with a baked sweet potato and steamed green beans. Full Recipe
