Healthy, easy, delicious treat

Are you barbecuing this weekend? Grill some fruit for an easy treat. You can grill anything from melon to pitted fruits. Suggestion: cut some peaches in half. Remove the pit. Spray the cut halves with cooking spray. Grill cut side down until the fruit has some grill marks, a couple minutes on each side, but be careful not to overcook, as the fruit will get mushy. Enjoy guilt free AND get your serving of fruit. It's a win-win!

Using packaged frozen spinach

I have a few ways that I use frozen spinach because it is so convenient. I make a spinach-rice casserole, cream of spinach soup, spinach frittata, but I'm always looking for new recipes to use it. (but I don't care for spinach in smoothies, I know that most say you can taste it but I certainly can)

Success Salad Dressing

Balsamic vinegar
Italian dressing dry mix
Water
2 Splenda packets
1 Salad shaker

Mix 2/3 vinegar with 1/3 water, a couple of Splenda packets and dry Italian dressing mix in a dressing shaker.

Quick and nutritious soup for a week

Recipe for a 5 veggie soup that runs about 350 calories for 2 cups. Kids like it to0. Freezes for lunches
1 pound ground veal
1 46 oz can Cento chicken broth (we love Cento the best; Swanson's is our #2)
1 can chopped tomatoes (we like Cento or Furman)
half a head of napa cabbage (not as pungent)
1 huge onion
About half a stalk of celery
Garlic (we like Penzey's dehydrated)
fresh parsley (huge bouquet)
green beans

Tofu success without deep fat frying

I love tofu in Asian restaurants but know that they deep fat fry the pieces. I asked a Chinese friend how her tofu comes out so perfect . She told me to drop the pieces into boiling water for a minute or two, then drain. Then fry the pieces with just a thin coating of oil in the skillet. Comes out perfect without the excess oil. The outside of the pieces are nice and crusty. I use firm tofu for this.

Stretch meat with lentils.

To cut back on our meat intake, I add cooked lentils to dishes that I use ground beef or ground turkey in.

Rice Cooker & Brown Rice

I kept having my rice cooker spewing out liquid when cooking brown rice.

I started putting the steamer basket in empty and it "breaks up the bubbles" as the rice cooks -- no more spewing!

Prep the pan!

Buy a pan with a good non-stick coating and use less than half the oil or butter for saute or pan-frying.

Love long-cooking oatmeal? Hate stirring? Use your crockpot

My hubby loves the oatmeal that takes 40 minutes of constant stirring until it's cooked. (example is McCann's Steel Cut Oat Meal).

Now he can use a small crockpot, 4 cups cold water, 1 cup oats and set it on low just before going to sleep.

6 hours later, an entire pot of perfectly cooked oatmeal.

Kitchen Workout!!!!!!!!

If you cook wearing your work out clothes; you'll be less likely to keep on tasting; therefore saving calories. Sounds silly and it may just be. But it works. lol
Plus it also may remind you to squeeze your booty muscles! emoticon
