Cook in batches

Pre-chop veggies. Do the prep work in the evening when you're watching TV. Chop veggies while you watch your favorite shows. You can chop veggies for all your evening meals for the week in an hour or so. Then put in containers or bags and stick them in the fridge.

Hide and seek veggies

Add grated carrots to chili. They will disappear , add a sweetness, and help thicken it. I added four cups to a pot of chili and got complements on the taste and texture.

Light Hummus

This hummus is very simple to make. Drain a can of chick peas and add to the processor. Add the juice of half a lemon, one clove of garlic pressed or minced, two tablespoons olive oil, salt and pepper. Whirl the ingredients or pulse a few times until the beans have pureed. The calorie count includes the beans and the two tblsp olive oil. That's it. A low calorie hummus that anyone can whip up. Serve with crudite or crackers.

Easy Way to Make Iced Tea

I use my drip coffee maker to make quick easy iced tea. Put 3-4 tea bags in the coffee filter and run through a carafe of water. Pour hot tea into a pitcher 1/2 full of ice and Viola... perfect iced tea!

Grilling Veggies

Use a cooling rack placed crosswise on your grill to keep vegetables in place and not falling through. Spray it with nonstick cooking spray to make it an easy job.

No fancy gear needed, nothing extra to store in the off-season.

Healthy Low Calories Snack

I keep home made hummus in the refrigerator, usually spinach edamame hummus as a quick snack. Sliced cucumber or zucchini make a healthy vehicle for the hummus. I also add it to wraps or pita bread sandwiches.

Cooking Meat

When cooking meat or poultry, remove it from the refrigerator 5 minutes before adding to a hot pan. If you put it in right away it shocks it and it becomes tough.

Easy Vegetables

Toss some broccoli into your pasta that's boiling for a couple of minutes at the end. Then you bulk up your meal with healthy vegetables that are al dente along with your pasta! It doesn't get any easier than that!
