Dinner meals at home and at restaurants don't have to be too difficult, it takes planning, to ensure good nutrition.

Cooking Substitutions

I like to substitute egg beaters for eggs for lower cholesterol and applesauce for less fats. In most baking you can not tell the difference. Also to save a bit of money I sometimes use cheese soup (Campbell's) or fiesta soup for flavor in place of cheddar cheese or American cheese.

Using packaged frozen spinach

I have a few ways that I use frozen spinach because it is so convenient. I make a spinach-rice casserole, cream of spinach soup, spinach frittata, but I'm always looking for new recipes to use it.
