Take a large pot, one bottle of barbecue sauce, boneless/skinless chicken breasts and enough water to cover them. Cook for 2 hours, pull apart with two forks, return to the pot and cook down the liquid portion. Serve alone or in wraps or tacos.
Left overs can be transformed into chicken salad by adding light mayo and chopped veggies. Serve cold on a bed of lettuce or in a whole wheat low fat tortilla.

I love these easy roasted chickens. For $5-8 dollars I can make several different meals. (1) Eating the leg&thigh portion right away w/some sides. (2) Making bowls of chicken noodle soup (usually freezing half for later in the month) with the carcass and some of the breast meat. (3) The remaining
chicken meat I can toss w/some BBQ sauce and have "pulled BBQ chicken" buns. Or chicken soft tacos w/some taco seasoning. Or chicken to top a salad. You get the point... I used to roast my own chicken but for another dollar or two I can save an hour of cooking....
I bake or grill 5 or 6 boneless chicken breasts once a week. I cut them in half and put them in a zip loc bag and put them in the freezer. Any time I need some chicken for salad or quesadillas, I pull one out and microwave for 1 to 2 minutes. The chicken is very moist and fresh and readily available. Shhhh, don't tell anyone.
