My Avurveda Doctor, Sunanda Tai advises the use of 1-2 tbsps.of Butter or Ghee daily with your Meals restricting the use of any Oil to minimum.This is because it easier for the Body to break this down and absorb it since this is a Natural By Product of Milk.This also helps lubricate the joints and is Heart Healthy too.Like all good things this too should be taken in the correct proportions for best effects---for like everything else too much is BAD for you!!!

I just remembered the old method used by my Great-Grandma Ba-aaji.She'd grease her hot Iron skillet,using an Onion cut in half to smear 1 tsp.of Oil or Ghee all over it.She'd then fry the Indian Rice pancakes(Aamboli/Dhirdi) by spreading the Batter with the back of an Iron Ladle.
These Pancakes lifted off easily from the hot Griddle when set---mouthwateringly soft on the inside and goldenly crisp on the outside!!!The use of Iron Utensils adds some Iron too to the Food cooked in these.
