Save a ton of calories over regular coconut milk and even light coconut milk - use Vanilla Almond Milk with a dash of coconut extract added instead!
Just a touch of extract is all you need and you can use the sweetened vanilla almond milk for 60 cals per cup or the unsweetened vanilla for 40 cals per cup. It's more comparable to Light coconut milk in consistency.

I like milk, but sometimes the taste just doesn't appeal. In order to enjoy my milk more I add a couple of tsp of sugar free coffee flavoring (my favorite is DaVinci SF French Vanilla). It is like a milk shake flavor without the calories of ice cream. I also like this over cereal--no need for added sugars or substitutes.244
Buttermilk Ranch Powder, Light Mayonnaise, and 2% Milk make a low fat low calorie ranch dressing. You can make it to suit yourself. You could even use skim milk. The packet calls for buttermilk and mayonnaise...I substituted the butter milk for 2% and the mayonnaise for Light Mayo.
I love Ranch Dressing and I like Italian, but neither of the two are low calorie. So I came up with the idea to make my own ranch dressing and splurge once in a while on Italian.
Have you seen those Shakey Weight commercials? Here's a fun substitute. Take a 1 pint jelly jar and fill it 3/4 full with Heavy Cream....shake it until its butter. It takes about 10 minutes. Put the butter in the refridgerator for later use and drink the milk that's left over, it's just like skim milk.
