When baking, substitute 1 tablespoon ground flax seed mixed with 3 tablespoons warm water for each (or some) of the eggs.

    This alters the texture of the finished product *slightly* in my experience. BUT, I do this when I realize I'm an egg short or when I feel like boosting the fiber content of the dish!
