Change what you are doing. I like to eat, so I exercise more to make up for it. As soon as I am not struggling to finish my exercises I increase the intensity, more speed and incline on treadmill, more reps of bodyweight exercises. If it gets easy you're not really exercising.

Doing simple exercises in a pool gives a great workout while being really easy on joints and you don't feel the soreness as much. Great way to start exercising if you haven't in a long time. You can build up to stronger movements and add styrofoam tools to increase intensity as you go along.
Instead of using weights on your extremities, increase your intensity - either go faster, or use incline and interval training to increase the intensity of your workouts. If you need to add weights, consider a weighted vest. You will suffer fewer injuries and risks than ankle, wrist or hand held weights.
