Grill up some veggies....Eggplant is especially good. When grill is hot, slice eggplant about 1/2-inch thick. Whisk together olive oil / vinegar, garlic,herbs, pepper. Brush both sides of the eggplant slices with the oil & vinegar mixture. Grill 20 minutes. Or how about grilled Brocolli w/lemon, or Zucchini, squash, asparagus, peppers, or mushrooms drizzled w/olive oil..make Vegetable Kebabs~marinate oil and vinegar mixture for 15 minutes, then grill for 12 minutes.
Try foil packets.
If you making vegetable kabobs, choose vegetables that have the same cooking time. Baby tomatoes grill much quicker than sliced carrots. Other choices are tomatoes, onion, asparagus, potatoes, sweet corn. Just watch the carbs. NOTHING COMPLICATED ABOUT GRILLED VEGGIES. Grilled Vegetable are EASY!!!
