Now there are small and less expensive Zucchini I make sandwiches with the. Slice lengthwise as thin as you wish and you can put in any regular sandwich filling. It doe not flop around like lettuce leaves and it is crunch and lots of fiber. Go Zucchini.

To cut back on carbs in the summer, I use zucchini sliced the long way. Put in sandwich fillings like tuna or roast turkey slices, I just pick it up as if it was bread. I discovered that when i was told I was allergic to wheat. I used it as bread for sandwiches but it does reduce carbs too. Iceberg lettuce leaves or Bibb lettuce makes a great wrap too.
