They bother my eyes but I actually get used to them after a while.I chop them and cook in microwave on High 6 minutes for 2 cups measured.Cool and put in bags or containers and you have Onions ready to go for soup or omelettes for a couple of weeks.It really goes fast especially if you have a dicer or slicer. I do 10 pounds at once. Flatten your freezer bags and it takes up even less space and thaws quickly.These caramelize well too

Microwave Magic - Peeling an Onion or a head of Garlic
To Peel Onions... Place onions on a covered microwave-safe plate and cook for 1 to 2 minutes at full power. Careful, the onion may be hot. I only need to cook a medium size onion for 50 seconds. The skin just peels right off and I don't "loose" so much of the onion this way.
To Remove Outer Skin from Garlic Cloves... Put the cloves in a custard cup and microwave at 80% power for 30 seconds. Allow the cloves to cool enough so you can handle them, then lift away the skin.
Make your favorite coffee a head of time (a whole pot or two) then cool, and then pour in small tupperware type containers (one cup or two, depending on your preferences) and freeze in your freezer!
