Start with 3 boneless skinless chicken breast cut them in to squares aka chunks put a little oil in a pan and put it on high then add your chicken cook it for about 10 mins mixing it well till its no longer pink then add in 1 cup of bbq sauce and cook another 10 mins then turn the heat to med and add another cup of bbq sauce and cover the pot to cook about 8 more mins then let the coated chicken set on low for a 5 mins the serve and enjoy serve with blue cheese or ranch ... yummy
Also I allow myself to eat about 1 cup of chicken chunks and by the time I am almost done there is almost 1/2 of the chicken left and I'm full since I cook rice to go with the chicken and allow myself the suggested serving for the rice and start with my rice first .. The rice makes me feel full .
I love trying new things, everyday, or else I get bored. I had to start creating my own recipes for healthier, newer dishes. So I tried this: 1 tortialla shell 1 Tbs BBQ sauce (or light salad dressing) 1 Red Bell Pepper 1/2 C. Chicken Handful of Spinach Dash of Favorite Type of Cheese (you can choose-mix and match new veggies every time you make it) Cook at 350 for 8 mins. Before eating any meal, I always choose to drink a glass of milk, so I'm more likely to eat less.
I use the toritalla shell as the crust, then layer the rest of the ingredients on top. I cook the chicken in a pan in olive oil. You can mix and match veggies every time you make it If you have left over chicken, you can make a chicken wrap with the ingredients above with light mustard the next day
