Instead of cooking up brown rice as the base to toss your stir-fry on -- go for the extra green veggie instead. Put a layer of fresh spinach on your dinner plate and top that with your stir-fry. More greens, less starch, but nicely filling.

A great tasty substitute for oil when doing stir fry or browning meat
My husband likes to take 1/2 to 1 whole onion and slowly cook it until it is translucent and there is a good amount of fluid. We like to use his "onion juice" for stir-fry and for browing meat. It tastes great and adds no fat!
Dislike fruits/veggies? make smoothies & stir fry's!
Turn your veggies into smoothies, and have a smoothie with nearly every meal (add different fruits each time). For extra yum, add splenda to your smoothies & soy milk they'll taste like milk shakes! Also, you can add a handful of spinich to most fruit smoothies without being able to taste it!
Also, make stir fry's with your veggies.
