On the Holiday Grill Veggies to help your diet...SO VERY EASY
Grill up some veggies....Eggplant is especially good. When grill is hot, slice eggplant about 1/2-inch thick. Whisk together olive oil / vinegar, garlic,herbs, pepper. Brush both sides of the eggplant slices with the oil & vinegar mixture. Grill 20 minutes. Or how about grilled Brocolli w/lemon, or Zucchini, squash, asparagus, peppers, or mushrooms drizzled w/olive oil..make Vegetable Kebabs~marinate oil and vinegar mixture for 15 minutes, then grill for 12 minutes. Try foil packets.
If you making vegetable kabobs, choose vegetables that have the same cooking time. Baby tomatoes grill much quicker than sliced carrots. Other choices are tomatoes, onion, asparagus, potatoes, sweet corn. Just watch the carbs. NOTHING COMPLICATED ABOUT GRILLED VEGGIES. Grilled Vegetable are EASY!!!
Those wonderful perforated anodized metal pans or bowls that allow you to grill veggies outdoors can be used in your oven. I set my top shelf slightly below middle of oven, put a cookie sheet covered with foil on the bottom shelf. Using zucchini, onions, green peppers, etc. I used a some salt and pepper and olive oil. Broiled for about 10-15 mint. Wonderful!
I could use McCormick Steakhouse Seasoning in the grinder package on almost anything. It adds a little bit of zest and a whole lot of flavor. Instead of just steak, this goes on chicken, grilled veggies, rice, etc in my house. It's amazing on rice cooked in stock or broth!
