My kids will not eat cooked cauliflower so I have been sneaking it in with potatoes to boil for mashed potatoes. We are up to 50/50 potatoes/cauliflower. The only remard has been "boy these potatoes are good mom!" They ARE better!

leave the peels on your potatos when you mash them. they are full of valuable vitamins and minerals and a wonderful source of potassium. they give texture to the mashed spuds, too!! I have never had anyone complain about this!!
