Once you've cooked a frozen pizza, it's hard to keep from going back for "just one more slice." if you're trying to control your portions, cut it into slices while it's frozen and then cook only one or two. If you want more after that, you'll have to wait another 15 minutes for it to cook, so it's a good deterrent.
Because cooking for one is tedious every night I create several servings of a new healthy meal and package the rest for lunch the next day, and freeze what is left in individual portions for use when I just don't have time to cook.
This is a cooking for one to two people idea. Cook a large meal, plate up the correct portions for everyone and then put all of the leftovers into portion sized containers before sitting down to eat. This way you won't be tempted to nibble on the leftovers as you put them away.
