I like to buy a rotisserie chicken, divide and weigh, bag up the portions. I use the breast meat to make sandwiches with honey mustard, bag, freezer! Have lunch ready any time I want. Grab one and run.
I put the juice from the container in a glass and fill it with water. When I take it out of the refrigerator, the fat has floated to the top. Scrape it off, and proceed to make chicken soup with the broth and small scraps of white meat left on the carcass and wing meat.

I like to use my Sundays to make meals for the rest of the week. I chop my veggies and put them in plastic storage bowls for my lunches. I cook one thing in the slow cooker to eat on all week. I portion it out for my meals so I never over eat it.
